Back in February of this year cheesecake brand CHEESE WONDER was founded with a mission to provide customers with a cheesecake developed keeping three important points in mind – freshness, time value and good raw ingredients.
Behind the brand, UTOPIA AGRICULTURE helped to create an SDG’s focussed system, where CHEESE WONDER could open their very own ranch and poultry farm from which they could source ingredients. The result is a sustainable brand that focuses on manufacturing delicious cheesecakes using only the very best of fresh produce.

With the brand’s launch far behind them, CHEESE WONDER has revealed their newest item limited to the winter season only – CHEESE WONDER BLACK – a cheesecake featuring the golden ratio of sweet and salty through the power of triple chocolate, almond cookies and raw cheese souffle.

It took six months of trial and error with different combinations for CHEESE WONDER to arrive at the perfect recipe for CHEESE WONDER BLACK.
The resulting cheesecake features a crispy pressed almond and dark chocolate cookie base, a center consisting of two layers of raw cheese souffle and sweet milk chocolate mousse and a coating of melted milk chocolate encasing all that goodness inside.

By layering the chocolate mousse and raw cheese souffle instead of mixing them together, CHEESE WONDER was able to develop a cheesecake that communicates not only the sweetness of chocolate but also the rich aroma and saltiness of the four types of cheese used in the recipe.

CHEESE WONDER goes above and beyond the call of a sustainable brand by using raw materials sourced from their very own dairy and poultry farms. Through the use of milk and eggs from free-range chickens and grazing cows, the brand is able to manufacture sweets that are both delicious and kind to the earth.

When viewed from the side, CHEESE WONDER BLACK reproduces the brand’s signature ‘W-shaped’ cookie base. This shape not only represents the ‘W’ in Cheese Wonder, but is also useful in helping the patissier distribute the correct amount of raw cheese souffle and chocolate mousse within the cheesecake. In addition, the indention in the ‘W’, allows for the sweet to be easily split down the middle – this is particularly useful for eating CHEESE WONDER BLACK in smaller bite-sized pieces or for sharing with loved ones.

CHEESE WONDER BLACK is best enjoyed before the cookie becomes soft, so once purchased it is recommended to consume within a day after thawing. As for how to eat, there are three different ways to try:

1 – Fully Thawed
Take out from the freezer and leave at room temperature for about an hour to fully defrost the cheesecake. This way allows you to experience the texture of the thick mousse at a chilled but not frozen temperature.

2 – Half Thawed
After removing from the freezer, leave the cheesecake at room temperature for 30 minutes. Eating CHEESE WONDER BLACK this way will enable you to enjoy the whipped smoothness of the chocolate mousse alongside an ice-cream textured cheese souffle.

3 – Frozen
If you’re a fan of ice cream and frozen sweets, then this is the option for you. To enjoy this way, remove from the freezer and allow to defrost for just 3 minutes before digging in.
