As you can surmise from its name, the YouTube channel アラフォー男子の独学料理 (arafō danshi no dokugaku ryōri | cooking by a self-taught man in his 40s) is a cooking channel run by a self-taught cook. He focuses on tasty dishes that are easy to make.

We'd like to introduce one of them perfect for the fall season as a tasty side dish or a snack: Sweet potato fries.

Once the sweet potatoes are sliced and cut into strips, place them in a bowl of water and wash by hand. Throw out the water, replace and repeat until the water in the bowl is clear. Place the sweet potato strips on paper towels, and dry them. Put them in a plastic bag, add 2 tbsp. potato starch and shake the bag well to coat the strips. Keeping a bit of air in the bag when you shake it helps to coat them evenly.

Heat 3 tbsp cooking oil in a frying pan at medium heat, add the sweet potato strips, and cook for about 6 to 7 minutes, separating them with cooking chopsticks to make sure they don't stick to each other. If the sweet potatoes have absorbed the oil and there is none left, add some more and continue cooking until they are browned. Then, season with a bit of salt, 1 tbsp sugar, and add 20 grams of butter. Continue cooking until the butter has melted, stir well, making sure that the fries don't burn. They're delicious like this, but you can also add 1/2 tbsp of soy sauce as well. Continue cooking a while longer, stirring well, until the fries are golden brown.

Transfer to paper towels if you want to remove some of the oil, and serve!
